Tasty Tuesday

The meal I prepared last night was a hit here at the compound!! So I decided that I would share that recipe with you after all. And before I get to far into the post....I have lost another two pounds.

Shrimp Scampi (with pasta)

Serving Size: 2 (I tripled this recipe to feed our crowd.)
Prep Time: 25 min

INGREDIENTS:

2 portions whole-wheat penne pasta (4oz uncooked)
1 TBSP Olive Oil
3 Cloves garlic, minced
2 portions of raw (thawed) shrimp, peeled and de-veined (about 1/2 lb)
3 tbsp butter (margarine, oleo, etc..your choice. The recipe actually calls for butter buds.)
3 tbsp white wine (I used Rachel Ray's chicken broth instead.)
1/4 tsp ground black pepper
1 lemon, halved
sprinkle of reduced, fat Parmesan cheese, grated
fresh parsley, chopped (I omitted this....basically b/c I forgot to buy it.)

Directions:
Prepare penne pasta according to its package directions.

While the pasta is cooking, heat olive oil and garlic in a wok or large skillet over medium heat.

Add shrimp to the skillet and cook, stirring frequently, until it's almost pink (three-quarters done) this will take two to five minutes depending on the amt of shrimp.

Add 1 tbsp of butter buds (or your choice of butter product) and white wine (here is where I used the chick broth) to the shrimp; saute about five more minutes until shrimp is cooked throughout.

Place cooked pasta in a large mixing bowl and combine it with remainder of the butter and black pepper; mix gently.

Add cooked shrimp to pasta and gently mix together.

Divide into two portions and spoon onto plates. top with squeeze of lemon, Parmesan cheese, and parsley.

Here is where I would insert a picture of the completed dinner....oops...I forgot to take that picture! You will just have to make it to see what the finished product looks like!!! It was a hit...even with a three year old and an eighteen month.

A Little this, a little that

There is just too much going on right now...I could write ten blogs all on the same day. I'll try not to overwhelm or bore you to death all at the same time.

First, let me start by saying how proud of my little girl! The is the first out of three kids that will actually sleep in her hospital cradle for any extended period of time. (she slept for two three hours stretches last night!!!!)

Last night mom brought the kids to the hospital so that they could meet their little sister. As you can see, Lucius was VERY excited to finally meet Abbie. Maggie on the other hand wasn't so sure about the little baby that Mommy was holding. Maggie did a lot of staring at her sister. But then I let them have a snack (more on that later) and Nana gave them presents and they quickly forgot that we were even in the room.

Mom got the kids the cutest little shirts that say I'm the big sister and I'm the big brother. She also got Lucius a push truck, and Maggie the cutest tutu and necklace. Mother is so thoughtful. She even picked up little gifts for the kids to give me and Abbie. For me, the kids gave me thank-you note cards.....def. needed those. And for Abbie, Lucius gave her a bath towel and Maggie gave her some bibs.

Mom also got us this door hanger that says Abbie Grace. (we are bouncing back and forth between calling my little girl Abbie or Abbie Grace. One of the reason's being that we keep calling Abbie...what else but Maggie.) It has a cute pink horse (or giraffe I can't tell) but it plays a lullaby.

And Lastly, I want to tell you how proud I am of Tom for stepping up his game!!! Yesterday he surprised me with a box of petifore's with Abbie initials on them. I love love love them. I finally got to eat one today at lunch and have been letting my visitors have one as well......so see, I'm bribing all of you to come visit....Just kidding!

I've got lots more pictures coming. And even a video of Abbie smiling!!! Looks like we will be heading home on Thursday. Thanks to everyone for calling and stopping by.

One Week

This is for one of my oldest friends who has been dealing with the same problem:

Last night marked one week that my three year old has slept in his own bed ALL night. No...he hasn't been sleeping in my bed for the past three years. About a month ago, with absolutely no warning, Lucius decided that Mommy and Daddy's bed was THE place to be. The first couple of nights I just let him climb in....I know.... But I'm six months pregnant and i NEED my sleep. This went on for about a week or so.

Then, I was at the doctors office waiting to see my OB when I noticed an article in Parenting about how to deal with children who are afraid of the dark. I don't really remember what the article said, but I realized that I didn't even know why Lucius was getting up in the middle of the night and refusing to go back to his bed. That night, when he arrived at the foot of my bed with blanket in tow, I asked him why he didn't want to go back to his room. He quickly let me know that his room was TOO dark (we were having this conversation in complete darkness as well...but you can't explain that to a three year old.) AND there were MONSTERS in his room.

The next day I went out and bought a night light for Lucius's room. Yes, he has gone the past three years without a light in his room, but I need the help. I wasn't sure what to do about the monsters. That night I put Lucius to bed expecting that all would be right with the world and he would stay put. No such luck. This went on for another week so. I was starting to drag during the day and even get just a little (read-a lot!!!) cranky.

Last Monday on my way to pick up the kids from daycare, I decided that I needed a better plan. I knew that if i could just get Lucius to bed earlier then I could get to bed earlier. (yes, this wasn't a solution to keeping him out of my bed, but it was all I could think to do.) The routine needed to be changed a little. Everything we were doing was great up until the moment that Lucius needed to be put in bed. There are just TOO many shows that I like to watch at the eight o'clock hour (Grey's, John and Kate plus 8, Super Nanny, American Idol, just to name a couple) and I (gasp) don't have a TIVO! So at eight Lucius and I head upstairs so that I can watch TV and he lays down on my bed to go to sleep. Around nine is when he falls asleep and then around ten (when he is good and asleep) I get Tom to take Lucius to his own bed. And I wonder why he won't stay in his own room.......

Back to last Monday.... At 7:45 i said to Lucius, "Come on, its bedtime." Received a little whining, but that stopped when I said lets get a book to read. We headed upstairs and picked out a book for him to read. We each took turns reading a Lighting McQueen book twice. Lucius said his prayers and I turned the light off. Then came the "Mommy I need another hug" and "Mommy, I need one more mooch!" Finally, I headed downstairs. There was some crying, but surprisingly, Lucius stayed in the bed. And around eight thirty it was silent!!! I could almost taste the victory!!! I checked on him around nine and he was fast asleep. AND more importantly, he stayed asleep and in his bed ALL night!

I have kept this same routine up all week and it seems to have worked. Who knew that kids need a little structure and consistency. To top it off, Lucius is so proud of himself. Every morning at breakfast he lets me know what a BIG BOY he is because he slept in his bed all by himself.
