He Shoots :: He Scores

Here are a couple of videos of Lucius from this past weekend. We had our next to last game this past Sunday. The final games are in two weeks (they are skipping Mother's Day weekend) with a trophy ceremony at the end of the two games.

We had SO many of our players there, Tom wasn't sure how to substitute the players fairly. REALLY...there were only two of our team members there on Sunday. We had to BORROW a player from the other team to play the first game. The second game the other coach decided we could just play two on two the whole time. It was a make-up game from the very first game of the season, so maybe the parents didn't realize it? I think that maybe we should make sure to call all the parents before the next game to remind them. Oops...that might have fallen into coach's wife duties. I've never had to remember that kind of thing before. ANYWAYS. Onto the videos.

The first one is of Lucius scoring a goal! After knocking down a kid or two. Seriously, when they get older it's a good thing. But at this age, I felt like Lucius was a bull in a china cabinet. I kept having to apologize to the parents of the other kids....while secretly screaming "Go get 'um tiger!" to myself.

The next two video's are of Lucius chasing after the ball, knocking other kids down, and just having a great time! He has gotten so much more aggressive than the first couple of weeks. He still comes to sit with me whenever he feels like it, but he def stayed out on the field longer this weekend. And it didn't hurt that I kept promising (bribing) his with ice pops if he would go out there and score another goal.

Tasty Tuesday

The meal I prepared last night was a hit here at the compound!! So I decided that I would share that recipe with you after all. And before I get to far into the post....I have lost another two pounds.

Shrimp Scampi (with pasta)

Serving Size: 2 (I tripled this recipe to feed our crowd.)
Prep Time: 25 min

INGREDIENTS:

2 portions whole-wheat penne pasta (4oz uncooked)
1 TBSP Olive Oil
3 Cloves garlic, minced
2 portions of raw (thawed) shrimp, peeled and de-veined (about 1/2 lb)
3 tbsp butter (margarine, oleo, etc..your choice. The recipe actually calls for butter buds.)
3 tbsp white wine (I used Rachel Ray's chicken broth instead.)
1/4 tsp ground black pepper
1 lemon, halved
sprinkle of reduced, fat Parmesan cheese, grated
fresh parsley, chopped (I omitted this....basically b/c I forgot to buy it.)

Directions:
Prepare penne pasta according to its package directions.

While the pasta is cooking, heat olive oil and garlic in a wok or large skillet over medium heat.

Add shrimp to the skillet and cook, stirring frequently, until it's almost pink (three-quarters done) this will take two to five minutes depending on the amt of shrimp.

Add 1 tbsp of butter buds (or your choice of butter product) and white wine (here is where I used the chick broth) to the shrimp; saute about five more minutes until shrimp is cooked throughout.

Place cooked pasta in a large mixing bowl and combine it with remainder of the butter and black pepper; mix gently.

Add cooked shrimp to pasta and gently mix together.

Divide into two portions and spoon onto plates. top with squeeze of lemon, Parmesan cheese, and parsley.

Here is where I would insert a picture of the completed dinner....oops...I forgot to take that picture! You will just have to make it to see what the finished product looks like!!! It was a hit...even with a three year old and an eighteen month.

Be careful what you wish for...

LAST weekend I let the kids get out in the kiddie pool and jokingly made a comment about them not being sick yet......

On Monday, Maggie's nose started running! I pulled out the humidifier....which by the way is almost as old as I am.

On Tuesday her teacher sent home a note that she was really fussy all day and had a low grade fever, along with some green snot. I gave her Motrin and the fever went away. Wednesday, I let Tom take her to daycare. Then, around lunch I started to feel guilty about her being at school and not feeling well, so I went and pick both Maggie and Lucius up.

Thursday morning Maggie work up with a fever so I kept her at home with me. By that afternoon she had a fever of 103.5 and I called the doctors office to get an appointment. It turned out to be a pretty nasty ear infection and she has been taking antibiotics ever since. I pretty much hung out with Abbie Grace and Maggie the past five days.

In case you were wondering, I did step on the scales last Tuesday and had lost three pounds. As soon as my doctor okays it (I have my post op checkup on Thursday), I will start doing some exercising.

The next two weeks are going to FLY by. I have so much that I want to get accomplished. I need to start off by writing thank you notes for the baby gifts that I received.

(This is the pillow that Abbie Grace received from my aunt and uncle)

Then a little spring cleaning is in order. I have a little shopping to do ( my MIL sent me a Kohl's gift card for some post baby clothes! Which I am extremely excited about!) And I also have scrapbooking to work on. I was finally able to get to the storage unit this weekend to pick up the rest of my paraphernalia.

I HAVE to start working on a schedule for Abbie Grace. She will have to start taking a bottle soon to get her ready for daycare (I plan on pumping during the day.) We also have to get her use to a swing because those daycare ladies aren't going to hold her all day long!!!! Hopefully that will also allow me to get some things done.

Tomorrow I will check back in with my progress with the weight loss and maybe share a recipe or two. We are trying Shrimp Scampi (healthy style) tonight. If it is a success, I'll let you in on the recipe.

Here's the picture of the sling that I promised sometime last week and never got a chance to post. Abbie Grace seems to like it, though I haven't quite got the hang of putting it on right.
