Sloppy Joe Recipe

This is a recipe that I have modified a little from 'Body for Life'.

Ingredients:

2 lbs of lean ground turkey
1/2 tsp ground black pepper
1 tsp onion powder (actually calls for one red onion chopped, but we don't eat chopped onions.)
1 8oz can of no-salt-added tomato sauce
1/2 to 1 cup of ketchup
1/2 cup barbecue sauce
2 tsp chili powder
1/2 cup sweet potato puree (this is optional. You can replace with another can of tomato sauce if you don't want to use the puree. You can also use baby food in a pinch if you don't have a puree ready.)

(When adding the ketchup and barbecue sauce I add until just before it gets to soupy. However, it will thicken up after stilling for a little after cooking.)
In a large skillet, combine ground turkey, black pepper and onion. Cook over medium heat, stirring occasionally, until the turkey is no longer pink.
Stir in tomato sauce, ketchup, barbecue sauce and chili powder. Simmer for about 10 minutes over low heat, stirring occasionally, until mixture has thickened.
You can place on wheat bun with lettuce. We also sprinkle a little grated cheese over the sloppy joe.

Serving size: 8 Prep time: 25 minutes. (you can also make a double recipe and freeze for an even quicker meal later.) I also portion out a small bit in freezer bags for Lucius for times when we eat something that I KNOW he won't eat.)
