Snow Daze...


Yes, it snowed even as far south as Dothan, AL. I really tried to get a picture so that I could actually prove that we had snow flurries, but it didn't really work all that well. If you look really hard at the house across the street you can almost see the small flurries against the brick.

Because of the snow today, I felt the need to post a picture of my kids outfits yesterday. It was actually over 70 degrees yesterday. Lucius was out playing soccer with Tom (he was supposed to have a game today that got cancelled) and Maggie even got to wear her new sandals. And the this morning we wake up to freezing weather and SNOW flurries. Really strange.

Due to the weather we were stuck inside all day. The fam and I did venture out to Sunday School and Church; however, I didn't think that I need to get either of the kids back out today. It REALLY made for a long afternoon..... Made much worse by a sixteen month old who has two new teeth coming in on the top of her mouth. She hasn't been herself for the last couple of days.

Around four I started to get restless, so I turned the kids over to Tom and made my way to the kitchen. I started out by making a huge pot of sloppy joe mix to put in the freezer. This is Lucius's favorite meal and I like to have extra on hand. Then I went about making muffins. The first two batches were a mix...whole grain Blueberry and whole grain banana nut. BUT for the last batch I did actually make a dozen muffins from scratch. They are Peanut butter Banana muffins that Lucius really likes. Here is the recipe:

1 cup firmly packed light or dark brown sugar
1/2 cup natural peanut butter
1/2 cup carrot or cauliflower (pureed)
1/2 cup banana puree
1 large egg white
1 cup whole-wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt.

Preheat oven to 350. Coat 12-cup muffin tin with cooking spray or line with paper baking cups. In a large mixing bowl, combine 1/2 cup of the brown sugar with the peanut butter, your choice of vegetable puree(I prefer cauliflower), banana puree, and the egg white, using a wooden spoon. Next, mix flour, baking powder, baking soda, and salt together. (You can put in a Ziploc back and shake....I found that this is easier). Add to the bowl with the peanut butter mixture and stir just to combine (the batter will be a little lumpy-do not over mix.) Add the remaining brown sugar and stir only once or twice.
Divide the batter among the muffin cups and bake until the muffins are lightly browned and a toothpick comes out clean when inserted into the center, approx. 15 minutes. Turn the muffins out onto a rack to cool.
These will store for several days at room temperature or you can wrap them individually and freeze for up to 1 month.

is the sloppy joe mix homemade or can? cause if it's homemade, list that recipe too!! 70 one day, flurries the next? only in alabama. we weren't that warm the day before!
